Banana Mac Nut Muffins

Ingredients

  • 1 ½ cup all purpose flour
  • 1 ½ tsp baking soda
  • ¼ tsp salt
  • ⅛ tsp ground nutmeg
  • 1 ¼ cup mashed ripened bananas
  • ½ cup unsalted butter, melted and cooled
  • ¼ cup milk
  • 1 large egg
  • 1 cup Ahualoa unsalted macadamia nuts
  • 1 pack muffin liners (optional)

Instructions

  1. Preheat oven to 350°F
  2. Line a muffin pan with paper liners or spray with non-stick spray
  3. Sift together the flour, baking soda, salt and nutmeg into a large bowl
  4. In a separate medium bowl, whisk together the mashed bananas, sugars, butter, milk and egg
  5. Pour over the dry ingredients and fold to combine
  6. Add half of the chopped mac nuts to the batter and fold gently to combine
  7. Divide the batter evenly between the muffin cups
  8. Sprinkle the tops with the remaining chopped mac nuts
  9. Bake until golden brown for approximately 25 minutes
  10. Let cool completely and store muffins for up to 3 days at room temperature
