Nurturing Our Macadamia Trees

Macadamia trees take time to mature, usually requiring 5-7 years before they produce their first crop. Once they do, they become a steady and reliable source of Hawaii-grown macadamia nuts for decades.

Macadamia nut flowers grow in white clusters 6-12” long, called racemes. These flowers eventually produce the macadamia nuts that you know and love. Unlike other crops that require harvesting on a strict schedule, macadamia nuts fall from the trees naturally when they are fully ripe, so you don’t need to pick them.

At Ahualoa Family Farms, we take extra steps to maintain the quality of our nuts from the moment they are harvested. Unlike mass-produced macadamia nuts,  we process in small batches to lock in the freshness and flavor of every nut. Our careful drying and roasting techniques enhance their natural, rich, buttery flavor, making them a favorite among chefs and food lovers. How Do We Harvest Our Macadamia Nuts?

Harvesting macadamia nuts is hard work! Since macadamia nuts fall from the trees when fully ripe, they are collected by hand and put into bags. While mechanical harvesting is sometimes used, most macadamia orchards on the island still rely on hand-picking. Once gathered, the nuts are brought to our factory to be processed.

Processing Hawaii-grown macadamia nuts is an art that requires skill and precision. The first step is removing the outer husk to reveal the hard shell inside. Once de-husked, we put them in our "stadium" dryer that blows a steady flow of warm air from below up through the nuts to dry them down to safe storage moisture and to allow for easier cracking. We store them quickly until we are ready to crack them. Since macadamia nut shells are among the toughest in the world, we use specialized equipment to carefully crack them open, revealing the precious kernel - the part you eat. You need 300 pounds of pressure to crack a macadamia nut! 
After removing the shells, we use a rotating screen, or trommel, with different hole sizes to sort the kernel by size. Then, we run the nuts through an optical sorter, which uses a high-speed camera to identify imperfections in the kernel and shoots a high-speed air jet to kick out the imperfect kernel. That way, only the best end up in your bag. Our historic factory was the first to use an optical sorter on macadamia nuts in the 1990s.


Once sorted, the nuts go through a quick roast to ensure they are dry enough for storage and food safety. After that, we give our kernels one more visual inspection with a human high, then vacuum pack them into 25-pound cases and send them to our certified kitchen to be turned into all of your favorite treats!  Unlike mass-produced nuts that rely on artificial flavors, all of our roasted & flavored macadamia nuts use real ingredients (that you can actually pronounce!) that enhance the natural creaminess of the macadamias, allowing their rich taste to shine through.
