Ingredients
- 1 ½ cup all purpose flour
- 1 ½ tsp baking soda
- ¼ tsp salt
- ⅛ tsp ground nutmeg
- 1 ¼ cup mashed ripened bananas
- ½ cup unsalted butter, melted and cooled
- ¼ cup milk
- 1 large egg
- 1 cup Ahualoa unsalted macadamia nuts
- 1 pack muffin liners (optional)
Instructions
- Preheat oven to 350°F
- Line a muffin pan with paper liners or spray with non-stick spray
- Sift together the flour, baking soda, salt and nutmeg into a large bowl
- In a separate medium bowl, whisk together the mashed bananas, sugars, butter, milk and egg
- Pour over the dry ingredients and fold to combine
- Add half of the chopped mac nuts to the batter and fold gently to combine
- Divide the batter evenly between the muffin cups
- Sprinkle the tops with the remaining chopped mac nuts
- Bake until golden brown for approximately 25 minutes
- Let cool completely and store muffins for up to 3 days at room temperature
